BLT Wrap
This is an atkins friendly recipe for one of my favorite sandwiches, the classic bacon, lettuce and tomato sandwich without the bread! You’ll wrap your ingredients in bacon instead of the toasted bread 🙂
Ingredients:
- 1 1b of Bacon (I prefer thick cut bacon)
- 1 Cup of Lettuce (shredded)
- 1 Cup of Tomatoes (diced)
- 1/8 Cup of Mayonnaise
- 1/4 Cup of Sliced Red Onion (optional)
Directions:
Preheat your oven to 475*
- Make a weave out of your bacon on a cookie sheet (refer to video below)
- Cook in your preheated oven for about 15 minutes, depending on the thickness of your bacon, remember not to overcook it, you’ll want to be able to roll it to hold the rest of the ingredients
- Remove your bacon from the oven when done and place on paper towel to drain the fat
- Transfer the weaved bacon to your work surface
- Spread your mayonnaise onto the bacon
- Add your tomatoes, lettuce and onion, evenly across the bacon
- Starting from the bottom of the bacon weave, roll the the bacon and all the ingredients into a cylinder shape
- Cut into 4 sections and enjoy 😉
