If you love the rotisserie chicken you can get at your local grocers or deli, then you are going to love this recipe!  The chicken is so moist and tender not to mention the taste is out of this world. This will cook slowly right in your own oven for about 6 hours.

IMPORTANT:  Your chicken will need to sit at least 4 hours in the refrigerator after it is prepared for roasting… Personally I leave mine overnight in the fridge so that it absorbs the flavors before roasting it does make a huge difference!

Ingredients:

  • 1  5-7 lb Whole Chicken (washed & gizzards removed)
  • 1  Large Sweet Vidalia Onion (cut into 4 quarters)
  • 4 Large Cloves of Garlic (slice each clove in half)

 

For The Rub:

  • 1/2  Cup Butter (melted)
  • 2 tsp  Onion Powder
  • 4 tsp  Smoked Paprika
  • 4 tsp Salt
  • 2 tsp Dried Thyme
  • 2 tsp White Pepper
  • 1 tsp Cayenne Pepper
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Italian Seasoning

 

Directions:

  • Put your chicken into your roasting pan 
  • In a bowl combine all the ingredients for the rub except for the butter
  • Pour the melted butter into the rub and mix very well
  • Using your hands or a brush, cover the entire chicken inside the cavity and the outside with the butter – rub mixture
  • Now put the onion and garlic inside the chicken cavity
  • Cover your chicken with saran wrap and place in the refrigerator for at least 4 hours.  Leaving it overnight will allow it to absorb even more of the rub, onion and garlic flavor
  • When ready to roast, pre-heat your oven to 250* take your chicken out of the fridge and remove the saran wrap
  • Place the chicken into the oven and cook for about 6 hours basting every hour
  • Your chicken is done when a meat thermometer inserted into the fattest part of the breast reads 165* or 180* in the thigh of the chicken

 

Remove from the oven and place on a plate to rest for about 10 minutes.  The drippings make a delicious gravy, or just dip the chicken into the drippings, either way it will be delicious 🙂
