Seriously, pancakes on a diet! I made these over the weekend and they are really very very good I was very surprised. Next time I make these I think I’ll have a pouched egg with it and the pancake can take the  place of the bread I’m missing 😉 

Ingredients:

  • 6 Eggs (seperate the egg whites & yolks into seperate bowls)
  • 1/2 Cup of Coconut Flour
  • 3/4 Cup of Coconut Milk
  • 2 TBSP of Melted Coconut Oil
  • 1/4 tsp of Salt
  • 1 tsp of Baking Powder
  • Butter or Coconut Oil For Frying

 

Directions:

  1. Whisk your egg whites and salt with a hand mixer until stiff peaks form
  2. Whisk together the egg yolks, coconut oil and the coconut milk in your bowl
  3. Add your coconut flour and baking powder to the yolk mixture until smooth
  4. Fold your egg whites into the yolk mixture gently, let stand 5 minutes
  5. Drop your pancake batter into your hot coconut oil or butter and fry for a minute or until brown, then flip and cook until done
  6. Serve with melted butter
