I love fried rice I would always order it at Chinese Restaurants but when I’m watching calories it’s not a diet friendly choice, this is a really perfect substitute and the texture of the cauliflower fried rice is very similar to real rice, I think you will be very surprised at how good this is 😉

You will need a cheese grater or food processor for this recipe

Ingredients:

  • 3 Cups of Cauliflower (grated or chopped to rice texture with food processor)
  • 1/2 Cup of Peas (frozen baby peas)
  • 1/2 Cup of Carrots (sliced thin)
  • 3 Cloves of Garlic (crushed)
  • 1 tsp of Italian Seasoning
  • 1/2 Cup of Water Chestnuts
  • 1/2 Cup of Corn
  • 1/2 Cup of Vidalia Onion (finely Chopped)
  • 1/2 TBSP of Extra Virgin Olive Oil
  • 2 Eggs (cooked scrambled egg style)
  • 3 TBSP of Soy Sauce
  • 1/2 Cup of Cashews (optional)
  • Chopped Scallions for Garnish (optional)

Directions:

  1. In a deep frying pan add your olive oil and put the heat to medium high
  2. Add your garlic, onion and italian seasoning, combining well
  3. Stir over the medium high heat until your onion is transparent about 3 minutes
  4. Mix in your peas, corn, water chestnuts and carrots and cook for another 3 minutes, stirring constantly
  5. Add your cauliflower, eggs, cashews and soy sauce mixing well until combined
  6. Continue cooking for about 5 minutes stirring constantly lightly
  7. Remove from heat and enjoy with your choice of protein 🙂
