This is another awesome recipe from Doctor Diet website, this isn’t just the chicken but a complete meal for all of us low carb dieters. This is 4 servings so you can take a serving for your lunch the next day.  🙂


  • 4 Boneless Skinless Chicken Breasts
  • 1 TBSP of Butter (you can use olive oil if you want)
  • Salt & Pepper
  • 1/2 LB of Leafy Greens (spinach, collards, swiss chards, romaine lettuce are some examples)
Herb Butter:
  • 1/3 LB of Butter @ Room Temp
  • 1 Garlic Clove (crushed)
  • 1/2 tsp of Garlic Powder
  • 4 TBSP of Fresh Parsley (chopped)
  • 1 tsp of Lemon Juice
  • 1 tsp of Salt

In a bowl mix all the ingredients together and set aside until ready to use



  1. Season your chicken with salt and pepper
  2. Melt your butter or olive oil in a frying pan over medium heat
  3. Add your chicken breasts to the butter and cook for a few minutes to get a nice brown color, then flip and cook the other side for another 3-5 minutes or until browned.
  4. Cover your chicken and reduce your heat to low, cook on low for about 7-12 minutes, depending on the thickness of your chicken.
  5.  Your chicken should be 165* when your meat thermometer is pushed halfway through the thickest part of the breast to be done
  6. Remove your chicken and place on a plate with 1/4 of your leafy greens, top your chicken with 1/4 of your herb butter
