This is one of my favorite cookies with the chewy oatmeal and plump juicy raisons what’s not to love about them! My recipe uses apple pie spice and a mixture of dark and golden raisons for unbeatable flavor 😉

Ingredients:

  • 2 Cups of All Purpose Flour
  • 1 tsp of Baking Soda
  • 1 tsp of Baking Powder
  • 1 tsp of Salt
  • 1 1/2 tsp of Apple Pie Spice (you can substitute cinnamon or allspice if you need)
  • 2 tsp of Vanilla Extract
  • 2 Eggs
  • 1 Cup of Butter (don’t use margarine, you can use unsalted butter if you prefer)
  • 1 Cup of Brown Sugar (light or dark)
  • 1 Cup of White Granulated Sugar
  • 3 Cups of Rolled Oats
  • 2 Cups of  Raisons (I use 1/2 dark and 1/2 golden raisons)

Directions:

Preheat your oven to 350*

  1. In a bowl add your raisons and fill with hot water, just so you cover the raisons, let them soak until ready to use
  2. With a mixer blend your butter, eggs, vanilla extract, brown and white sugars until completely combined
  3. Add your baking soda, baking powder, salt and apple pie spice, blend well making sure to scrape down the sides of the bowl so that all the ingredients are well blended together
  4. Add your flour and mix in by hand until it is completely combined
  5. Stir in your oats until well combined
  6. Drain the water well from your raisons and combine into the cookie batter
  7. Drop by large Tablespoons onto un-greased cookie sheets about 2 inches apart
  8. Cook for 15-18 minutes or just until golden brown on the top
  9. Remove from oven and let rest for a few minutes before removing them to a platter or plate
