This blueberry coffee cake recipe has been passed down for generations in our family and it is absolutely delicious, light and airy not to mention that the topping is to die for š
Pre-heat oven to 350*
ButterĀ a 9x9x2” pan
Ingredients:
Batter:
- 1/4 CupĀ Butter
- 1/2 Cup Sugar
- 1 Egg
- 2 Cups of Flour
- 2 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 Cup of Milk
- 1 1/2 Cups Fresh Blueberries
Topping:
- 1/2 Cup white sugar
- 1/3 Cup flour
- 1/4 CupĀ Butter
- 1 tsp of cinnamon
Mix all topping ingredients together until crumbly and set aside
Directions:
- Cream butterĀ and sugar together
- Add Egg and blend well.
- Sift flour, salt and baking powder together in bowl
- Add flour mixture alternately with the milk to the sugar (do this by hand not with a blender)
- Stir in blueberries by hand to batter
- Spread in well butteredĀ 9x9x2 pan
- Sprinkle the topping over the batter mixture evenly
- Bake in pre-heated 350* oven for 40-50 minutes or until a toothpick comes out clean from the center.
