Apple fritters are one of my favorites from a bakery but my mom made the best ones. When I was growing up my mom would make these and homemade doughnuts for us on a weekend morning, I will never forget the smell in the house when she decided to surprise us with them 🙂
Ingredients:
- 3 Cups of All Purpose Flour
- 4 tsp of Baking Powder
- 1 tsp of Salt
- 4 TBSP of White Sugar
- 6 TBSP of Cinnamon
- 1 tsp of Vanilla
- 2 TBSP of Olive Oil
- 1 1/3 Cups of Milk
- 4 Eggs (beaten)
- 3 Cups of Granny Smith Apples (peeled, cored and cut into 1″ cubes)
- 3 Cups of Honey Crisp Apples (peeled, cored and cut into 1″ cubes)
- Vegetable Oil For Frying
Glaze For The Apple Fritters:
- 3 Cups of Powdered Sugar
- 8 TBSP of Milk
- 2 tsp of Vanilla
*** Blend all of the ingredients together with a fork until smooth and set aside***
Directions:
- Put your sugar and cinnamon into a small bowl, mix and set aside
- Sift your flour baking powder and salt all together into a bowl
- Add your milk, eggs, olive oil and vanilla to the flour mixture and blend well
- Pour in the cinnamon sugar stirring until combined
- Add your chopped apples mixing by hand until they are well combined and evenly distributed throughout the dough
- Heat your frying oil in a deep skillet or deep fryer to 375*
- Drop your apple fritter dough by heaping Tablespoons into the hot oil about 4 at a time so that they aren’t crowded and you can flip them
- Cook for about 3 minutes, flip and continue cooking for another 2-3 minutes
- Remove and put on wire rack to drain the oil (put paper towel under the racks)
- Continue cooking in batches until all your dough mixture is gone
- Brush thickly with the glaze or coat with cinnamon sugar (if the glaze is to thick, just put in the microwave for 10 seconds at a time stirring between every 10 seconds until it’s the right consistency)
