During the summer months there is always an excess of zucchini either fresh out of your gardens or at the farmers market. There are so many ways to use fresh zucchini and making fried zucchini sticks is one of my favs 🙂
Ingredients:
- 4 Medium to Large Zucchinis
- Vegetable Oil For Frying
Tempura Batter:
- 1 Cup of Flour
- 1/4 Cup of Cornstarch
- 1/2 tsp of Baking Soda
- 1/2 tsp of Celery Salt
- 1/2 tsp of Seasoned Salt
- 1/2 tsp of Black Pepper
The Breading
- 1 Cup of Bread Crumbs
- 1 Cup of Freshly Grated Parmesan Cheese
- 1 tsp of Ground Black Pepper
- 1/2 tsp of Seasoned Salt
Directions:
- In a medium sized bowl mix everything together for your batter and set aside
- Mix all of your breading ingredients in another bowl and set aside
- Wash your zucchini and chop your ends off
- Cut  your zucchini in half and then each half down the middle so each zucchini will give you 4 zucchini sticks
- Put your zucchini sticks into your tempura batter and then transfer to the breadcrumb mixture
- Place the breaded zucchini on a plate and continue doing the same with all of your zucchini sticks
- Place the breaded zucchini into your freezer for 15 minutes, this helps your breading stay on your zucchini during the frying process
- Heat your vegetable oil in your deep fryer or on your stove top to 375*
- Take your zucchini sticks out of the freezer and add 6-8 at a time to your heated oil
- Cook for about 4-7 minutes or until golden brown
- Remove and set on paper towel or paper bag to drain
- Continue cooking the rest of your zucchini
Serve with Ranch Dressing or Red Robins Campfire Sauce follow the recipes below:
Homemade Ranch Dipping Sauce:
- 1 Cup of Mayonnaise
- 1/2 Cup of Sour Cream
- 1/2Â Cup of Buttermilk
- 1 Packet of  Hidden Valley Ranch Dressing Mix
Mix all the ingredients together until smooth and refrigerate until ready to use
Red Robins Campfire Sauce:
- 1 Cup of Mayonnaise (I use Hellman’s)
- 1 Cup of Sweet Baby Rays Hickory & Brown Sugar BBQ Sauce
- 1 tsp of Chipotle Dry Seasoning
Mix everything together well and put in the fridge until ready to use
