This is a very simple salad that I enjoy in the summertime especially when it’s hot out The flavors just blend perfectly when mixed together If you’re looking for something different to bring to a bbq this is always eaten right up šĀ
Ingredients:
- 2 Heads of Broccoli (washed and all the florets cut off, discard the stems)
- 8 Pieces of Thick Cut Bacon (cooked crisp but not burned)
- 1 Cup of Fresh Corn (I cut it right off the cob)
- 1/2 Cup of Red OnionĀ (finely chopped)
- 1 Cup of Cheddar Cheese (shredded)
Dressing:
- 1/4 Cup of Red Wine Vinegar
- 1/8 Cup of White Sugar
- 2/3 Cups of Mayonnaise or Greek Yogurt
- 2 tsp of Fresh Squeezed Lemmon Juice
- Salt & Pepper to Taste
***Mix all the ingredients for the salad dressing together, adding salt and pepper to your liking, refrigerateĀ until ready to use
Directions:
- Steam your broccoli florets for about 3 minutes so that they are bright green and still crunchy Set aside to cool
- Cook your bacon until crispy, remove to paper towel so the grease drains then chop into bite size pieces
- In your serving bowl combine your steamed broccoli florets, corn, bacon and dressing together until well combined
- Stir in your cheese blending well
- Refrigerate until ready to eat
