Roasting a bone in pork in similar to a boneless pork roast but needs a little more time to cook and the resting time is a little longer so that the juices can settle and be used for your gravy This is a prime cut of meat and the recipe below will yield deliciously moist meat 🙂

 

Ingredients:

  • 4 to 5 lb center cut bone in pork loin roast
  • 1/4 Cup of Extra Virgin Olive Oil
  • 5 Cloves of Crushed Garlic (freshly crushed is better with this recipe)
  • 2 tsp of Crushed Dried Thyme
  • 2 tsp of Dried Rosemary

 

Directions:

Preheat your oven to 350*

  1. Bring your pork roast to room temperature, leave out for about 2 hours prior to cooking
  2. In a small bowl add your olive oil, crushed garlic, rosemary and thyme, mix well
  3. Rinse your roast and pat dry before putting into your roasting pan
  4. Generously salt and pepper your roast on all sides including the bottom of the roast
  5. Rub your olive oil mixture evenly over the entire roast
  6. Put your meat thermometer into the thickest part of your roast halfway avoiding the bone
  7. Put your roast into your preheated 350* oven on the middle oven rack
  8. Cook for an hour before checking if not at 175* continue cooking checking every 10 minutes until you’ve reached  an internal temperature of the 175*
  9. Remove from oven and let it rest for about 10 minutes so that the juices settle back into your roast
