Aunt Heather found this recipe and it is Atkins friendly being a low carb one dish meal that is easy to make for a quick healthy dinner 🙂

Ingredients:

8-9″ Deep Dish Pie Dish  

  • 1 1/2 LBS Ground Beef
  • 3  Eggs Whisked
  • 1/2 Cup Mayonnaise
  • 1/2 Cup of Half & Half
  • 1 TBSP of Mustard (any kind)
  • 2 Cups of Triple Sharp Cheddar Cheese Shredded
  • 4 Slices of Cooked Bacon Chopped
  • 1/2 Cup of Chopped Clausen Pickles
  • 1/4 Cup of Chopped Onion (any kind you prefer)
  • Salt & Pepper to Taste

Directions:

Preheat your oven to 350*

  1. Cook your beef, onion, salt and pepper in a frying pan stirring frequently so the beef is broken up into fine pieces
  2. When done cooking, drain the grease from the burger mixture and add your chopped bacon mixing well into the beef
  3. Next, pour the beef mixture into the bottom of your pie dish
  4. Add your chopped pickles over the burger mixture
  5. Add your shredded cheese over the pickles
  6. Now in a bowl add your mixed eggs, mayonnaise, half & half and your mustard together until well blended and pour over the shredded cheese
  7. Bake in your preheated 350* oven for 40-45 minutes
  8. Remove from the oven and let it set for about 5-10 minutes so that the quiche can set
