Cheeseburger Quiche
Aunt Heather found this recipe and it is Atkins friendly being a low carb one dish meal that is easy to make for a quick healthy dinner 🙂
Ingredients:
- 1 1/2 LBS Ground Beef
- 3 Â Eggs Whisked
- 1/2 Cup Mayonnaise
- 1/2 Cup of Half & Half
- 1 TBSP of Mustard (any kind)
- 2 Cups of Triple Sharp Cheddar Cheese Shredded
- 4 Slices of Cooked Bacon Chopped
- 1/2 Cup of Chopped Clausen Pickles
- 1/4 Cup of Chopped Onion (any kind you prefer)
- Salt & Pepper to Taste
Directions:
Preheat your oven to 350*
- Cook your beef, onion, salt and pepper in a frying pan stirring frequently so the beef is broken up into fine pieces
- When done cooking, drain the grease from the burger mixture and add your chopped bacon mixing well into the beef
- Next, pour the beef mixture into the bottom of your pie dish
- Add your chopped pickles over the burger mixture
- Add your shredded cheese over the pickles
- Now in a bowl add your mixed eggs, mayonnaise, half & half and your mustard together until well blended and pour over the shredded cheese
- Bake in your preheated 350* oven for 40-45 minutes
- Remove from the oven and let it set for about 5-10 minutes so that the quiche can set
