This is a delicious soup recipe that is hearty and very fulfilling on a cold winters day. If you love beef stew but are looking for something a little less heavy then give this a try! The flavor is amazing you will not be disappointed when it’s done cooking 🙂

Ingredients:

  • 1 1/2 LBS of Lean Ground Beef
  • 1/2  Medium Sized Vidalia Onion Diced Finely
  • 3  Cloves of Crushed Garlic
  • 1 tsp of Horseradish
  • 1 tsp of Dill Seasoning
  • 1 tsp of Reds Hot Sauce
  • 1/4 tsp of Cinnamon
  • 2 28oz Cans of Diced Tomatoes (do not drain)
  • 4 Potatoes Cut Into Cubes 1″ Diameter
  • 1 Cup of Carrots Sliced
  • 1 Cup of Peas
  • 2 Cups of Frozen or Fresh String Green Beans
  • 1 Cup of Frozen Corn (I use baby white corn)
  • 4 Cups of Beef Broth (Swanson’s is what I use)

 

Directions:

  1. In a skillet, add your onions, garlic and ground beef cook over medium heat being sure to break of the ground beef as it cooks and mixing in with your onions and garlic
  2. When meat mixture is done, drain the fat and put into your soup pot
  3. Add your beef broth to the meat mixture and cook over medium heat
  4. Add your spices to the beef and broth stirring to completely combined
  5. Add salt and pepper to your taste
  6. Now add your potatoes and the rest of your veggies stirring until combined
  7. Lastly add your canned tomatoes and all of their juices to your soup stirring to combine all ingredients together
  8. Cover and reduce your heat to low – medium heat so that your soup is at a soft boil, making sure to stir about every 10-15 minutes
  9. Cook everything for about 1 and 1/2 hours so that the flavors combine

 

Serve with some freshly baked baguette or in a bread bowl 🙂
