Seriously, pancakes on a diet! I made these over the weekend and they are really very very good I was very surprised. Next time I make these I think I’ll have a pouched egg with it and the pancake can take the place of the bread I’m missing 😉
Ingredients:
- 6 Eggs (seperate the egg whites & yolks into seperate bowls)
- 1/2 Cup of Coconut Flour
- 3/4 Cup of Coconut Milk
- 2 TBSP of Melted Coconut Oil
- 1/4 tsp of Salt
- 1 tsp of Baking Powder
- Butter or Coconut Oil For Frying
Directions:
- Whisk your egg whites and salt with a hand mixer until stiff peaks form
- Whisk together the egg yolks, coconut oil and the coconut milk in your bowl
- Add your coconut flour and baking powder to the yolk mixture until smooth
- Fold your egg whites into the yolk mixture gently, let stand 5 minutes
- Drop your pancake batter into your hot coconut oil or butter and fry for a minute or until brown, then flip and cook until done
- Serve with melted butter
